This week closes out two things: the season's last batch of Okushiri Murasaki Uni, and our regular Wednesday arrivals until September. Here's what's in this week, and what to expect before we go quiet.
The Last Okushiri Murasaki Uni of the Season
This week's Murasaki Uni is the final batch of the season from Ogawa Shoten on Okushiri Island, off the southwest coast of Hokkaido. It's packed in saltwater brine (塩水ウニ — Ensui Uni) rather than laid dry in a tray, so no alum is needed to hold its shape. Keita tasted an early sample from this batch a couple of weeks ago, ahead of it landing in DC — creamy and fluffy, some of the best of the season. Once this run sells out, Okushiri Murasaki Uni won't be back until next year. Order at shop.sashimidc.com.
Sasshu Salmon: Still Frozen
The Kumamoto earthquake logistics disruption we wrote about last week hasn't cleared yet. Sasshu Salmon is frozen again this week rather than our usual fresh, never-frozen product — the same one-time exception, still in effect while shipping out of Kyushu catches up.
Everything Else, As Usual
Bluefin Tuna and the rest of this week's lineup arrived on schedule and are in the case as normal — Sasshu Salmon is the one exception this week.
We're Closed August 17 – September 1. Back September 2nd.
We're closing for the summer holiday period in Japan starting Monday, August 17, with no fish shipment through September 1. We reopen Wednesday, September 2 with the first shipment after the break — plan ahead if you want fish before we go quiet.

Snow Crane Returns to Little Pearl — Sunday, Aug 16
Snow Crane's ice cream residency comes back to Little Pearl in Capitol Hill for Round Two this Sunday, August 16. Keita tried their first round early on and it was excellent — delicate, well worked, worth the trip. Rotating flavors, some familiar and some brand new, run Sunday through Tuesday, 10am–2pm, at Little Pearl.
