Our classes are beginner-friendly and built around fish imported directly from Japan — never frozen, and roughly 48 hours from Miyazaki. In the Knife Sharpening and Sashimi Slicing Class, you sharpen your own kitchen knife on Japanese whetstones, then slice sashimi-grade fish and take both home.
